Vegan Pumpkin Love Cookies
My husband, Steven, loved these cookies and he is a really tough cookie critic. He also does not particularly like or care whether they are healthy. These are just plain good and healthy enough to have for breakfast and of course full of love! I made these for the Open House this weekend and they were a big hit!
- 2 cups organic all purpose flour
- 1 1/3 cup spelt flakes (can use oats instead but spelt is higher in protein)
- 1 t. baking soda
- 3/4 t. salt
- 1 t. cinnamon
- 1/2 t. nutmeg
- 1 2/3 c sugar (unrefined is best)
- 2/3 c canola oil ( I use melted Earth Balance margarine)
- 2 T. molasses
- 1 c Pumpkin
- 1 t. vanilla
- 1/3 c ground flax seeds
- 2/3 cup coconut flakes
- 1 c. pumpkin seeds
- 1/2 c dried cranberries (Newman’s own makes organic ones!)
Mix together flour, spelt, baking soda, salt and spices. Mix together sugar, oil, molasses, pumpkin, flax seeds, and vanilla very well. Add dry ingredients to wet in 3 batches. Fold in nuts, coconut, and cranberries. These don’t spread out much so you can place them on a greased cookie sheet pretty close together. Bake at 350 degrees for 16 minutes. These are even better the next day.
