I don’t know why I haven’t made these before. They are relatively easy and totally yummy.
Get out your food processor with grating blade. Of course you can hand grate everything but it will take a lot more time.
Ingredients:
1 large sweet potato peeled
4 medium yukon gold potatoes ( I don’t peel these but you could)
3 carrots
Grate all of the above and pour into a big bowl
1 large onion chopped fine
3/4 cup flour
1 Tablespoon baking powder
chopped fresh herbs of your choice, I used chives and parsley
1 teaspoon salt
Black pepper to taste
Add the rest of the ingredients above and stir until everything is coated evenly
Heat a cast iron skillet with 1/2 inch of canola oil on medium low. Make sure the oil gets hot but doesn’t smoke. Take 2 Tablespoons of the mixture in your hand, make into ball and then flatten and put in hot pan.
Brown evenly on each side. Put on cookie sheet with a layer of brown paper bag and keep warm in oven at 200 degrees until all is done.
We made a sauce of red peppers, cashews, garlic, onion, salt and pepper. You can serve these with vegan sour cream or whatever turns you on! Traditionally I think they would be served with sour cream and applesauce.
This is a great way to eat lots of veggies and also my kids love them. You could add chopped scallions, finely chopped broccoli, whatever you like.
