Only Kale Can Save Us Now

I haven’t quite mastered these but I am getting close. The easiest way to make them is to take Kale, I like the curly kind, and wash and tear, remove the stem. Then you toss it with salt, pepper, olive oil and any other spice you like. Bake in the oven at 200 degrees for 1/2 hour or so. You kind of have to keep an eye on it so they get crispy but don’t burn.

Little more tricky: Cheesy Kale Chips

soak 1/2 cup cashews in water for 1 hour. Rinse and then put in blender with 1/4 cup water, 1/2 red bell pepper, 3 Tablespoons nutritional yeast, juice of 1/2 lemon, and salt and pepper to taste. Blend on high until creamy. Add more liquid if needed but be careful to not make it too wet. Taste and adjust seasoning. You can add a bit of mustard, liquid smoke, or hot pepper. You flavor it how you like.

Toss the kale with the sauce so it is evenly coated but not too much. Bake at 200 degrees until crispy but not burned.
