This is a great quick recipe for a summer party. People go crazy over it which is funny because it is super easy to make. Check it out and adjust whatever.
Quinoa, Corn, and Edamame salad
I made a salad for the teacher training recently that was a really big hit. This salad is so gosh-darned easy and good for you. It also seems to be very addicting. I have brought it to a number of events and have gotten many requests for the recipe. Here it is. Quinoa is a kick-ass grain (wheat family) that has tons of protein and other nutrients. You can usually find it in the boxed grain section with rice etc. You may need to go to a health food store. They do have it a Trader Joes!
Salad:
- 2 cups quinoa
- 1 tbl. olive oil
- 1 tsp. salt
- 1 cup frozen corn
- 1 cup frozen edamame (soy beans)
Dressing:
- 1/2 cup olive oil
- 1/4 cup rice vinegar
- 1/4 cup tamari or soy sauce
- 1/4 cup sesame oil (I use the red pepper infused one; it is very spicy, so use regular toasted sesame oil if you don’t like spicy)
- 1 tbl. agave or honey
- 2 crushed garlic cloves
- Bring 4 cups of water to a boil; add olive oil, salt, and quinoa.
- Boil quinoa for 5 minutes, then turn off stove, cover pot and let sit for 15 minutes.
- While the quinoa is cooling, cook corn and edamame in boiling water for 5 minutes. Drain, rinse, and let cool.
- Mix all the dressing ingredients together and toss with the quinoa and veggies when cooled.
- Finish salad with chopped red pepper, sesame seeds and chopped parsley or cilantro.
I will be honest with you, I don’t measure anything! These are just estimates so taste the dressing and add more or less to make it how you like it. You may even need to double the recipe if you find it doesn’t flavor the salad sufficiently.
